Lazy Sunday

So, I saw the documentary Food Inc today. Let me tell you, it confirmed that my eating choices are the right ones for me. After watching mutated poultry and cattle being shoved through the wringer, and genetically modified corn infect just about everything on the planet I decided I was hungry for something untainted.

I've had a head of cabbage in my fridge for about a week now. I was planning on making a soup with it, but decided to braise it instead. I do all of my grocery shopping at the community market just a few miles from my house, Sevananda. I LOVE THIS STORE. I actually have to put limits on myself as to how frequently I'm allowed to grocery shop. They sell organic and locally grown foods, and I could stand and stare at the bulk bins and spice selection for days. Anyway.  This recipe calls for very few ingredients and is simple to make and delicious.
The chicken is glad none of his friends are in there.



1 head of cabbage- chopped-I left some decent sized wedge chunks
1 Onion-sliced
2 carrots-sliced
1 cup of water and1/2 a Not Chik'n cube or you can use a stock of your choice
1 and a half Tablespoons balsamic vinegar (mine was a rosemary balsamic and it was good)
1 teaspoon or more of crushed red pepper flakes depending on your preferred spice level
sea salt and pepper to taste


I put all ingredients in a pot let it simmer on a medium heat for about an hour and a half, stirring it every so often. It should make your house smell like a magical dream and be just slightly crunchy when it's done.
Easy enough, right?

I topped mine with quinoa, yellow squash, zucchini, and chickpeas that I had leftover from some stuffed peppers I made last night and I was really pleased with how it turned out. Better than I expected, actually.

Since the cabbage takes a good bit of time to cook I took it as a good time to make some raw treats I've been exploring on different paleolithic sites. I didn't have all the ingredients to make any certain thing, so I just made up my own recipe with what I had and I think it turned out well. I used....

A handful of  raw almonds
Handful of raisins
couple pinches of ground Cinnamon
little less than 1/4 teaspoon of pure vanilla extract

My food processor isn't working so I put the almonds in a plastic bag and beat them with a can opener like they stole my boyfriend. I then put all the ingredients in the blender and grated them up until it was a good fine consistency. I rolled this mixture up into about 6 or 7 small balls and rolled them in organic unsweetened coconut and then flattened them out to look more like a cookie.

I'm tasty.


I took a rest day from my workouts today. I found two 25lb plates in my backyard and am pretty sore from my workout yesterday and I was just feeling like having a lazy Sunday. I intend on trying to update this blog daily (or close to), so hopefully I'll be back with you tomorrow for some new recipes and a workout.
